Peachy Keen!

I've been trying to make this recipe for a few weeks now. The first time I tried, the peaches I bought were too soft and fell apart while I was cutting them. The next time I tried to make the dish, I realized Scott drank the Mt. Dew (yes, there is indeed Mt. Dew in the recipe).

Tonight I finally had some firm peaches and a bottle of Mt. Dew in the fridge! I was very leery of this recipe, but intrigued by the ingredients. It turns out like a dumpling surrounded by a very sweet syrup. It is really yummy, and very easy to make. I think this recipe would also be great with apples this fall. (I made a half batch of the recipe below.)


Peach Enchiladas

2 packages (8 ounces each) refrigerated crescent roll dough
4 firm peaches, peeled, pitted and quartered
1 1/2 cups sugar
1 cup butter or margarine, melted
1 teaspoon ground cinnamon
1 citrus-flavored soda (12-ounce can) such as Mountain Dew

Preheat oven to 350 degrees. Coat a 13-inch by 9-inch by 2-inch pan with non-stick spray, set aside.Unroll crescent roll dough and separate into triangles. Place 1 peach quarter on the wide end of a dough triangle. Roll up from large end to small end to encase the peach slice. Place in prepared pan. Repeat with remaining crescent dough and peaches.In a small bowl, combine sugar, melted butter and cinnamon. Pour mixture over rolls. Pour soda over top and bake for 45 minutes.

When the going gets tough...

The tough pick strawberries!

Sometimes life hands you lemons. Maybe your roof keeps leaking, or your roommate thinks you are her taxi. Perhaps you don't like storms or some evil bastard broke your heart. No matter what crappy hand life deals you, you can always pick stawberries and mix them with the lemons for a treat. And heck, if like has been particulary bad, add some vodka!

This fun filled weekend started off by Ali taking me on my very first strawberry picking excursion. We made it back just in time to hear the storm sirens. Since our original plans for watching an outdoor movie were stormed out, our friend Sara came down for a makeshift girls night of pizza, wine, and trivial pursuit. It finally stopped raining Saturday afternoon, so Ali and I ventured downtown to our favorite annual festival, The Vintage Indiana Wine festival. Our goal was to sample wine from every winery there (19) and we did! Although it was very hot and humid, it was fun as always and being the responsible drinkers we are, we asked Scott to come pick us up. What a good guy! Sunday, Scott and I tried a new (to us) breakfast place, a little down home cooking hole-in-the-wall place called Keystone Deli. The home fries were delish! To top it off with a lazy afternoon, Ali and I spent the day at the pool! When I got home, I cooled off with this slushy drink...



Strawberry Lemonade Slushy

16 oz. Crystal Light Pink Lemonade
1/2 cup frozen strawberries
1/2 cup ice cubes

Mix all ingredients in a blender until frothy. Drink!

Fruity Breakfast Burrito

I wanted to whip up something for breakfast that involved stuff I need to use up. I have a ton of strawberries and bananas, and some left over tortillas. Combined with a few pantry staples, this was a delicious treat!


Strawberry & Banana PB Burrito


1 fajita sized flour tortilla
1/4 cup diced strawberries
1 diced small banana
2 Tablespoons peanut butter
1 teaspoon of honey

Spread peanut butter over tortilla, top with diced fruit and drizzle with honey.
